Food allergies are among the most pressing health concerns worldwide. Symptoms after consuming allergens include digestive disorders (diarrhea, vomiting), respiratory issues (rhinitis and asthma), skin reactions (urticaria, atopic dermatitis), and even anaphylactic shock, posing significant threats to both children's and adults' health and lives. Therefore, developing analytical methods for detecting allergens is crucial.
Mustard is one of the common allergens in food. Commercial mustard often consists of a mixture of Sinapis alba (white or yellow mustard) and Brassica juncea (brown mustard). Additionally, there are black mustard (Brassica nigra), green mustard - mustard greens (Brassica juncea), and a blend of related varieties. Over half of the patients allergic to mustard also show sensitivity to certain foods and pollen derived from the Brassicaceae family, which also includes allergens from rapeseed, cabbage, and broccoli. The main allergen in mustard is associated with the SinA gene. The TopSPEC® Mustard Detection Kit facilitates the detection of mustard allergens in food through Real-time PCR by identifying the presence of the SinA gene in mustard.
